Diced, minced and chopped veggies and herbs – tomatoes, peppers, onion, garlic and cilantro, are stirred and given a splash of lime juice. That ‘s it. You can make it mild or hot depending on the number of bits of jalapeno pepper you add.

A light but super-tasty pasta dish, with fresh asparagus cooked in broth with sauteed garlic and seasoned chicken.

Scrapple or mush has been a hearty breakfast staple in our family for generations.

Sauteed leeks and other vegetables are cooked in a broth which is thickened with a cornstarch and dry mustard mixture in this soup with Gruyere and cheddar cheese.

A rich, creamy fondue, of sour cream, cream cheese, and cream of shrimp soup. Great for dunking chunks of fresh French bread– or topping a bbq’d steak…a family favorite for sure!

This cream soup is an example of a happy and delicious combination of flavors–bright ginger, fruity pear, with an assortment of savory vegetables and fresh herbs. It has a lot of ingredients, but it’s well worth the effort.

This is a chopped salad with lots of tomatoes, onions, cucumbers and peppers. Fresh parsley, basil and garlic are folded in and just a hint of vinegar is splashed on to give it some bite. Chill and the flavors pop out

Beans, corn, scallions, bell peppers and onions are mixed together and napped with a vinaigrette dressing that has had a few niceties added …cilantro, pepper, cayenne and cumin. Toss and let sit overnight.

Smooth tofu and yogurt mixed with raspberries, bananas, and orange juice.
