Black beans and sweet potatoes are spiced up with jalapenos, cumin, and garlic, then broiled in the oven for a cake that’s less fat but just as flavorful as the fried kind.

Green beans with bacon, tomatoes, and onion, (optional) are great for family gatherings. Easy and quick to make with just a few ingredients.

This is a hearty, filling side dish that looks and tastes great. Tomatoes are stuffed with rice, bell pepper, onion, parsley and garlic.

Salmon fillets are poached in chicken stock along with fragrant fresh dill.

Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee

Apples are cooked in their juices, then sweetened and spiced. Just before serving, a stiff egg white is folded in for a fluffy consistency.

I got a basic recipe for this from a friend many years ago. Since then, I’ve tweaked it to fit my family’s taste.

Marzipan can be a great cover for a cake, or cut out fun shapes to decorate cakes, cookies, or eat alone. You will need a little frosting to glue the marzipan to a cookie or cake and it can make for a yummy treat.
