Bon Appetit Magazine Recipe Makeover: Healthy "Eggs In Purgatory"
I got the idea for this recipe from the March 2010 issue of Bon Appetit magazine. I lightened it up by eliminating the potatoes and doubling the amount of artichoke. I also added carrots.
