Coconut and Tofu Curry Recipe
Although this vegetarian and vegan curry recipe isn’t authentic to any ethnic cuisine per se, I find that the mild flavor really gets absorbed into the tofu and blends well with the rich coconut flavor. When served over rice, tofu curry makes for a great entree.
