Dietetic Interns from the Southcoast Food & Nutrition team share healthier recipe options to traditional Super Bowl snacks. The healthy recipes reduce intake of calories, saturated fat, and sodium while at the same time increase intake of fiber and protein providing a much healthier, yet very tasty, alternative.
There are other recipes for these muffins but none of them are the same as this one. I hate most bran muffins but these are wonderful! Who knew eating healthy could be so yummy! This batter can be kept in the refrigerator for a couple of weeks so you can bake fresh batches when you want them. I usually make 6 at a time.
I’ve just discovered barley (apart from boiled in soups) so am on the lookout for new recipes using it. This one comes from the Taste site and looks good! I’ve “estimated” 60 minutes prep including cooking the barley and chicken (at the same time!) and then called it a no cook recipe.
